Read MoreHi hi! Yesterday morning I threw what I had on hand into my crockpot and eight hours later I was so pleased to have a warm and comforting bowl of white chili to dive into after a long day. It’s so easy to make that I’ve never even had to write the recipe down. Just about all of the quantities are in TWOS. It’s TOO simple not to make. :)
Serves: 4-6 Hands On Time: 15 minutes Total Time: 4 - 8 hours
Ingredients:
2 chicken breasts (approx. 1 lb.)
2 cans great northern beans, drained and rinsed
2 cans diced green chilies (the small 4oz cans)
2 jalapeños, seeded and diced
2 cloves garlic, minced
1/2 an onion, diced
2 Tablespoons cumin
1 1/2 teaspoons dried oregano
1 1/2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon pepper
2 cups chicken bone broth (or chicken stock)
1 lime - zested and juiced
1/2 block of cream cheese (if you like a thicker soup use the whole block)
2 swirls of the pot with heavy cream
Topping Suggestions:
shredded monterrey jack cheese
cilantro
tortilla chips
squirt of lime
hot sauce
sour cream
avocado
Directions:
Add chicken, beans, green chillies, diced onion, diced jalapeño, minced garlic, cumin, oregano, chili powder, salt, pepper, bone broth, lime zest and lime juice into a slow cooker.
Set it on low for 8 hours or high for 4 hours.
When there is about 1-2 hours remaining, open the lid and shred the chicken with a fork. If it doesn't shred easily, it needs more time. Throw in the cream cheese and put the lid back on for the remaining time.
When the time is up, stir in the now softened cream cheese until incorporated. Add a few swirls of the pot with heavy cream. Taste and add salt if needed.
Serve with suggested toppings.

Recipe is fully adjustable based on your likings! Add more beans or broth or chicken. It’s a method! A very, very easy method.

Dressing little girls for back to school is one of my favorite things! And don’t forget they need more than one “school” themed outfit - you’ve got meet the teacher, first day of school, open house, picture day and more! I love traditional looking dresses with Peter Pan collars paired with ruffle socks and classic Mary Jane shoes. Speaking of shoes - I’m a HUGE fan of the L’Amour brand of children’s shoes. They wear so well, have easy Velcro straps, and have the sweetest details like little scallops and stitching. Emilia will be wearing her L’Amour shoes with this dress on her first day!

Dressing boys is hard, I think! I am a big fan of more traditional clothes for littles - especially before they turn three. Think sets (like this one) and Jon Jons. As they get older Its more Polos. Now that Deacon is going into first grade I can get him in a plain polo a few times a year and the rest of the time he wants to wear school athletic wear. Dress them sweet while you can - the years are fleeting! He and I both love this brand of shorts (I like a shorter short - so cute!), but these are great if you want something a bit longer (and go up to size 16). and these performance polos are a real fav and work for an older boy. This backpack is still in such good shape after last year, he’s using it again this year. Perfect size for Kinder - 3rd grade. And we can't forget Deacon’s old faithful - the gray New Balance. He had to wear those shoes when he was learning to walk because his ankles needed the support and he had inserts, now he doesn’t need them and it’s still what he picks out year after year! Love my old-soul boy so much!
